{Recipe} Baked Apple Pancakes

I found a recipe for Fried Apple Pancakes,
But I knew a wanted them baked.
I tweaked the recipe to fit my needs...
And a yummy breakfast on a Saturday morning was made.


Baked Apple Pancakes

2 Sweet Apples
1 cup Bisquick
1 Egg
1/2 cup Milk
1 teaspoon Pumpkin Pie Spice
1/4 teaspoon Cinnamon, optional
Lemon Juice, to prevent browning
Gourmet Maple Praline Syrup


Directions

Preheat your griddle to medium temperature.
Using a mandolin, slice apples on thinnest setting.
Take a small round cookie cutter and press into the center of each slice, thus removing the core.
Immediately place into a bowl with a couple of tablespoons of lemon juice to prevent browning.
Mix together the Bisquick, egg, milk and spices until just incorporated.
Dip apple slices into the batter and place in the griddle.
The side facing up will need a little batter spread on the top for better batter coverage.
Flip once the first side is lightly browned.
Once the second side is equally browned, serve immediately.
Drizzle syrup of your choice.
We used a Gourmet Maple Praline that was amazing from a local grocery store.


Reality Check- 
These didn't go over as well as I would have liked, because I forgot that Matt doesn't like warm fruit...
and Asher thought the apple needed to be on the outside of the pancake.  He picked it apart and ate them separately.

Due to the moisture of the apples and lemon juice, the batter did not want to adhere, so I had to spread extra batter on top.

That syrup is SOOOO GOOD!  Combined with the apple pancake... divine.

Abbie and I enjoyed them, so Girls Rule!

{Recipe} Baked Apple Chips

Want a simple, healthy snack?
I found the idea over at The Italian Dish.
I did it before church on Sunday while the kids ate breakfast...
By the time we got home, they were ready to eat.
This is a healthy snack, especially if you use Brown Sugar Splenda.


Baked Apple Chips

3 Apples, medium
1/3 Brown Sugar or Brown Sugar Splenda
1 teaspoon Cinnamon

Using a mandolin, quickly slice the apples and place in a bowl with lemon juice to prevent browning.
Lay apple slices on two cookie sheets lined with parchment paper or a silpat.
Mix the brown sugar and cinnamon together with a fork, to get rid of any lumps.
Sprinkle mixture on all of the slices until gone.
Bake 2-4 hours at 200-225 degrees.

Note~ Do NOT use tin foil.
On the second batch I made with Gala Apples, I sliced them even thinner with the mandolin then placed them on foil.  Almost all of them stuck to the foil, rather than lifting up nicely like they did with the parchment paper.
Also, don't use nutmeg.  We experimented, and even with the small amount used... it was overpowering.

{Recipe} Sweet Potato Pie with Rosette Whipped Cream

I hope that everyone had a Happy Thanksgiving filled with family memories and yummy food.
We were with my Dad's side of the family this year.
The weather was perfect, so the kids could all still play outside.
I got my sweet potatoes with mallows on top, so food wise I was set:)

I was in charge of a salad and two pies...
so I made Homemade Sweet Potato Pie and Key Lime Pie.
I have already posted the recipe for Key Lime Pie.
Sweet Potato Pie
Recipe adapted from Gina @Skinnytaste

2 (1-1/2 lbs) Sweet Potatoes
2 T Butter, softened
3/4 cup packed Brown Sugar
1/2 cup Milk
2 large Eggs
1 tsp ground Pumpkin Pie Spice
1 t Cinnamon
1 T Vanilla Extract
1 (9 inch) unbaked Pie Crust

Boil sweet potato whole in skin for approximately 60 minutes, or until soft. Run cold water over the sweet potato, and remove the skin. Chop the sweet potatoes and place in food processor.  Pulse until fibers are gone and consistency is smooth.


Place sweet potatoes in a bowl. Add butter, and mix well. Using an electric mixer, mix in sugar, milk, eggs, cinnamon and vanilla. Beat until mixture is smooth. Pour filling into an unbaked pie crust.  Watch and take precautions if you do not like your crust too brown. Foil or pie crust guards will aid in keeping the crust the right texture and color.


Bake at 350 degrees. Start checking pie at 55 minutes, or until knife inserted in center comes out clean. Mine was in for approx. 75 minutes.
Serve with homemade Whipped Cream.

Homemade Whipped Cream

2 cups Heavy Whipping Cream
up to 1/2 cup Sugar
1 t Vanilla Extract

Whip the cream with an electric mixer until soft peaks are forming.  Add the sugar and vanilla, them whip until stiff peaks form.  DO NOT over whip, the cream will start to break down and no longer hold it's form.
I used a disposable piping bag and a 1M Wilton Cake Tip.
I did whipped cream rosettes similar to the frosting rosettes HERE.
I lightly sprinkled Pumpkin Pie Spice on the top.
There was enough whipped Cream to cover the Sweet Potato Pie, and the Key Lime Pie.

This pie tastes similar to pumpkin.  I enjoyed it, and can now say I have had sweet potato pie:)




Key Lime is one of my favorites, though I think it would be interesting to try it with Lemon Juice or Grapefruit Juice, instead of the Lime.

{Recipe} Hot Spiced Caramel Cider and Baked Apple Wontons


I was so excited to be invited to Sheryl, of Lady Behind the Curtain, to participate in the Improv Cooking Challenge.

This is Challenge #1 and set up kind of like Iron Chef... but without the really bizarre ingredients;)
This month is Apples and Caramel.

I made Hot Caramel Apple Spiced Cider,
 and Baked Apple Wontons

Hot Caramel Apple Spiced Cider

5 cups No Sugar Added Apple Juice
4 Cinnamon Sticks
1 Vanilla Bean
Pinch of Ground Cloves
Caramel Ice Cream Sauce
Large White Sanding Sugar

Place first 4 ingredients in a pot on medium low heat for one hour.  The drink will boil down to be approx. 2 1/2 cups.
I used 1.4 ounce glasses and dipped the rims in caramel sauce, then sprinkled the sanding sugar so that it adhered to the rim. 
Once the drink mixture has finished the hour cook time, remove from heat and strain the juice.  Carefully pour into glasses.
This drink tastes and smells best when hot.

Baked Apple Wontons

24 Wonton Wrappers
1 large Honeycrisp Apple
1 1/2 T Cinnamon Sugar Mix
Water
Cooking Spray

Cut and dice the apple and quickly sprinkle on the cinnamon sugar mixture.  Layout a monton wrapper and use your finger to brush water on the edges.  Place a 1/2 teaspoon of diced apple in the center of the wrapper and fold in half to form a triangle.  Brush water on each of the three points, then fold in toward the center.  Place on an aluminum pan, seam side down.
Once all of the apple is gone, lightly spray the wontons with the cooking spray, then top with some of the sanding sugar.
Bake in the oven at 350 degrees for 10-15 minutes, or until golden brown.

I dipped these in some of the Caramel Ice Cream Sauce that I added a pinch of Sea Salt to.
These Apple Wontons tasted like little caramel apple pies.

3 of the Apple Wontons and one little glass of Hot Apple Cider was the perfect treat to satisfy the sweet tooth.  Even better was the fact that this dessert had almost no added sugar, and was baked instead of fried:)

{Recipe} Sweet Turkey Supreme and Pork Chop Supreme


Sweet Turkey Supreme

4 Turkey Cutlets
4 Orange Slices cut 1/4 inch thick
4 T Raspberry Jam
4 T Orange Juice
4 T Brown Sugar (we used Brown Sugar Splenda)

Turn oven on to 350 degrees.  Lightly Spray a 9 x13 glass dish.  Place the cutlets into the dish and put an orange slice on top of each one.  Now place 1 Tablespoon of the other ingredients on top of each cutlet.  Cover the dish with tin foil and bake for 30 minutes.  Remove tinfoil and use a turkey baster to place juices back on top of the cutlets.  Leave the tinfoil off and bake for another 20 minutes; basting approx. every 7 minutes.  Just make sure the meat reaches an internal heat of 165 degrees.  When it's done, remove the orange slices and serve with the sides of your choice and enjoy.
*Added~ Try different varieties.  Blackberry Jam, Lemon Slices, and Lemon Juice or Strawberry Jam, Macerated Fresh Strawberries, and Key Lime Juice... Yum!

I have issues with meat.  I am practically a vegetarian.  Not because of any higher motive, but because I am a picky eater who just has a hard time eating meat.  I don't have as hard of a time with turkey, thus the recipe above, and most of the time I am okay with chicken.  There is very few Pork recipes I will eat.  Practically burnt bacon is one, and the following recipe with it's sweet, delectable bites is the other.



Sliced Onion

Pork Chop Supreme

4 Pork Chops
4 Lg White Onion Slices
4 T Lemon Juice
4 T Ketchup
4 T Brown Sugar

{Same directions as above}
Turn oven on to 350 degrees.  Lightly Spray a 9 x13 glass dish.  Place the pork chops into the dish and put an onion slice on top of each one.  Now place 1 Tablespoon of the other ingredients on top of each cutlet.  Cover the dish with tin foil and bake for 30 minutes.  Remove tinfoil and use a turkey baster to place juices back on top of the pork chops.  Leave the tinfoil off and bake for another 20 minutes; basting approx. every 7 minutes.  Just make sure the meat reaches an internal heat of 165 degrees.  When it's done, remove the onion slices and serve with the sides of your choice and enjoy.
*Added~ You can eat the baked onion slices, I just always give mine to my mom.  You can also use the leftover yummy sauce to dip each pork chop bite in...waste not, want not:)
