{Recipe} Sweet Potato Pie with Rosette Whipped Cream

I hope that everyone had a Happy Thanksgiving filled with family memories and yummy food.
We were with my Dad's side of the family this year.
The weather was perfect, so the kids could all still play outside.
I got my sweet potatoes with mallows on top, so food wise I was set:)

I was in charge of a salad and two pies...
so I made Homemade Sweet Potato Pie and Key Lime Pie.
I have already posted the recipe for Key Lime Pie.
Sweet Potato Pie
Recipe adapted from Gina @Skinnytaste

2 (1-1/2 lbs) Sweet Potatoes
2 T Butter, softened
3/4 cup packed Brown Sugar
1/2 cup Milk
2 large Eggs
1 tsp ground Pumpkin Pie Spice
1 t Cinnamon
1 T Vanilla Extract
1 (9 inch) unbaked Pie Crust

Boil sweet potato whole in skin for approximately 60 minutes, or until soft. Run cold water over the sweet potato, and remove the skin. Chop the sweet potatoes and place in food processor.  Pulse until fibers are gone and consistency is smooth.


Place sweet potatoes in a bowl. Add butter, and mix well. Using an electric mixer, mix in sugar, milk, eggs, cinnamon and vanilla. Beat until mixture is smooth. Pour filling into an unbaked pie crust.  Watch and take precautions if you do not like your crust too brown. Foil or pie crust guards will aid in keeping the crust the right texture and color.


Bake at 350 degrees. Start checking pie at 55 minutes, or until knife inserted in center comes out clean. Mine was in for approx. 75 minutes.
Serve with homemade Whipped Cream.

Homemade Whipped Cream

2 cups Heavy Whipping Cream
up to 1/2 cup Sugar
1 t Vanilla Extract

Whip the cream with an electric mixer until soft peaks are forming.  Add the sugar and vanilla, them whip until stiff peaks form.  DO NOT over whip, the cream will start to break down and no longer hold it's form.
I used a disposable piping bag and a 1M Wilton Cake Tip.
I did whipped cream rosettes similar to the frosting rosettes HERE.
I lightly sprinkled Pumpkin Pie Spice on the top.
There was enough whipped Cream to cover the Sweet Potato Pie, and the Key Lime Pie.

This pie tastes similar to pumpkin.  I enjoyed it, and can now say I have had sweet potato pie:)




Key Lime is one of my favorites, though I think it would be interesting to try it with Lemon Juice or Grapefruit Juice, instead of the Lime.
